Help! Short Ribs!?
As far as I can see, there are a few types of beef short ribs. I have seen them sold in long skinny strips of meat (bacon-sized), with little oval pieces of bone running down the length.
The other are 2"x3"x1" cubes of meat with plates of bone inside. This is what I have in my kitchen.
What type of short ribs do MOST recipes call for? They never specify....
They also never say if I need to do anything special to separate the meat from the bone, or make eating easier.
Can you please help? Do I just cook the ribs the way they are, in little blocks? I don't need recipes...I just need to know what to do to the meat before I start the recipe!
The most popular for recipes is the 2x3x1 size as you call it. The thicker, fatter ones. Most short rib recipes call for them to be "braised" which means cooking very slowly at a very low temperature. After this is done, the meat will simply fall right off the bone.
Crock Pot cooking of short ribs is ideal. Put them in with some water or beef broth and cook them all day.
